dishes of the past.
Besides Offida is
placed in a landscape
of hills between sea
and mountains, and so
it couldn't experience
a grapevine
culture, which
today offers wines
of excellent
quality.
SPECIALITY FOODS AND
DISHES:
The products and local
dishes that represent
the culinary
specialities can be
tasted only when you
arrive to the town and
only in some
restaurants or shops
who prepare and offer
such local products,
such as:
Il chichì
ripieno:
it is a very tasty
flat bread stuffed with
tuna, anchovies,
artichoke in oil and
pickled peppers. It is
particularly suitable
for snacks or to
accompany appetizers
and aperitifs.
I
funghetti:
they are very simple
cakes made of water,
sugar, flour and
anisette. They are so
called because they
have the shape of small
mushrooms.
OTHERTYPICAL
DISHES:
Maccheroncini with
chicken giblets and
tomato sauce:
the home made
maccheroncini are
spiced with tomato
sauce and chicken
giblets, all flavoured
with pecorino cheese
(sheep's milk
cheese).
Li
taccù:
it was a very poor
dish, very common in
the past. It is a sort
of thick tagliolini
(noodles) kneaded only
with water and flour,
without eggs, which can
be cooked in various
ways: in soup with
finely chopped onions
and bacon or pasta
spiced with tomato
sauce.
Pollo Ncipp
Nciapp:
It is a very simple
and tasty dish, it is
browning chicken cooked
in a frying pan and
flavoured with garlic
and rosemary.
Coniglio in
salsa:
it is a very tasty and
spiced rabbit stew with
pepper sauce,
anchovies, parsley,
capers, olives and
artichokes in oil.
Torta
treseinove:
it is a traditional
cake of Offida, it is
very simple. It is a
layer of sweet pastry
which is then sprinkled
with alkermes and all
is covered with a layer
of chocolate cream then
covered once again by
another layer of sweet
pastry and this is
again sprinkled with
alkermes and at the end
all is covered with a
layer of
custard.
